Crockpot Cooking - Advantages and Disadvantages
In my 'un-biased' opinion, the crockpot / slow cooker
is one of the most convenient and easy to use appliances
in my kitchen. The time savings features of the
slow cooker and the delicious dinners that have
resulted more than offset any minor drawbacks.
Before I list my top reasons why the crockpot is the
most useful appliance in any kitchen, I will list
a few of the areas where it does not perform as well.
- Large cuts of meat such as boneless prime rib or
leg of lamb are still best when oven roasted.
- Except for stews and chowders, the slow cooker
does not cook fish very well.
- The slow cooker collects a lot of the juices
since the steam does not escape during cooking and these
juices can become diluted and watery, which can affect
the flavoring of the food.
- If not careful, a slow cooker can overcook food -especially
some of the more tender meats and poultry.
These drawbacks are relatively minor compared to the
positives which I will list now.
- The slow cooker needs virtually no tending while
it cooks, freeing you up to do other chores or recipes.
- The slow cooker will tenderize less expensive, tough
cuts of meat and make great stews out of them.
- The slow cooker allows you to be out of the kitchen
for extended periods of time -sometimes even all day.
- Burning your food is rarely a problem. The slow cooker
will make many dishes for you better than any other
appliance -especially those that tend to stick to
the bottom of a pan.
In my opinion the slow cooker is one of the most
under-utilized and yet superior of kitchen appliances.
When used for what it does best, you will find that you
are able to prepare great dishes in less time than you
though possible!

Beans - 2 cups of size of small tinned milk
Dried crayfish - 2-table spoonful
Beef - 1kg
African snail - 4 medium size
Dried fish - 1 large size
'Stock' (cod) fish (dried) - 4 pieces or medium size
Dried pepper or ground chilly pepper - to taste (depending on your palate)
Seasoning - your choice of brand -2 cubes
West African Palm-oil - 1 cooking spoon
Large pepper - 2 large size
Tomatoes - 2 medium size
Onion - 1 medium size
Salt - a pinch to taste
Water - as -required
Serve hotThe ingredients: Red pepper, tomatoes and onions, pieces or chunks of boiled beef, red palm-oil, dried crayfish, smoked catfish, ground and dry pepper, salt plus 3cubes of food seasoning, pieces of boiled African snail and pieces dried of 'stock' fish and the washed beans with the skin peeled at the centre.
(To save time, have the mixture of your ground tomatoes, onions and pepper in a blender to a smooth paste prior to the following steps)1st step: The beans would have been soaked in water for about 5min to soften the skin.
Noodles
Different cultures have their own way of taking some water and mixing it with an all-purpose flour, a rice flour, a wheat flour and adding either barley, buckwheat,soybeans,seaweed or tapioca.
After combining whatever ingredients are used with the type of a chosen flour, they work the dough on a floured surface, roll the dough out and let it dry.
Kalasan Fried Chicken (Indonesian Sweet Fried Chicken)
Ingredients:4 pcs Big Red Chili (omit the seeds)
100 cc of coconut water
1 pc Tomato (Cut into 4 pcs)
2 pcs Shallots (1 pc cut into 2 pcs)
3 pcs of Salam leaves or bay leaves as a substitute
1 pc of Galangal (bruised)
1 pc of Brown Sugar
1 chicken (cut into smaller pieces)Method:Simmer chicken with coconut water, salt and all the ingredients until the water has almost evaporated and the chicken is tender.
Drain and allow to cool.
